After playing outside all day, I would return to my mama’s kitchen looking forward to her sopita de fideo; that delicious soupy snack that would hold me until dinner. I can still remember the smell of fideo. The aroma carried all the way out to my mama’s patio. I immediately knew the sopita was ready to be served. I would run energetically to her kitchen to enjoy my cup of soup – so full of taste with all its savory spices.

In all the years that I’ve eaten fideo, I’ve notice that there aren’t two people that make it the same. Everybody adds their own personal touch to the fideo to make it their own. Needless to say, I haven’t found sopa de fideo like my mom’s anywhere, but what I have found are a couple of places that prepare fideo with a unique twist.

  • 1 pkg. (7oz.) fideo pasta
  • 3 cups of water
  • 2 tablespoons vegetable oil
  • ½ cup of tomato sauce
  • 1 cube of Knorr Chicken Bouillon
  • Pinch of ground cumin
  • Pinch of garlic salt


Heat oil in a medium saucepan over medium heat and fry the fideo until golden brown. Add the tomato sauce and the water. Season with the Knorr cube, cumin, and garlic salt. Bring to a boil and cook until the fideo is tender, about 15 minutes. For a thicker soup reduce the amount of water.
