Las Gorditas de Las Cruces

A popular Mexican dish, gorditas are a cross between a pita and a taco.

They are made from cornmeal and are essentially a thick, fried corn tortilla. Depending on where you are, gorditas can vary significantly. Some are prepared using red chile as the liquid for making the masa, so they are a bit spicy and red. Some are not stuffed with anything but rather the flavoring is added directly to the masa. Yet others are stuffed only with beans. In this region, they are generally prepared with ground beef and potatoes, lettuce, tomato, cheese and topped off with salsa.

We found three excellent variations of local gorditas. Surprisingly, although they are prepared very similarly, they tasted quite different.
