Ginger Turkey


1 lb lean ground turkey
½ medium onion, chopped
1.5 tbsp minced fresh ginger
2 garlic cloves, minced
¼ cup water chestnuts, chopped
¼ cup low sodium soy sauce
1 tbsp olive oil
Salt and pepper, to taste


  1. In a medium non-stick pan, heat the olive oil over medium-high heat.

  2. Sauté the onions, ginger and garlic until the onion softens.

  3. Add the turkey, salt and pepper and cook, crumbling it with a wooden spoon, until evenly browned and cooked through (about 10 minutes).

  4. Add the water chestnuts and the soy sauce and continue to cook another 5 minutes.

  5. Cover and remove from heat.

Ginger Turkey Lettuce Wraps


Prepared ginger turkey
1 head of butter lettuce, leafs separated, rinsed and dried
4 green onions, only the green part thinly sliced
½ cup carrots, shredded
Salted peanuts, chopped
Peanut dressing 


  1. Fill a lettuce cup with the ginger turkey 

  2. Sprinkle with a pinch of green onion, carrots and peanuts 

  3. Finally drizzle with peanut dressing

Peanut Dressing


2 tbsp creamy peanut butter
3 tbsp sweet chili sauce
2 tbsp low sodium soy sauce
3 tbsp water
1 tbsp olive oil


  1. Combine all the ingredients in a small mixing bowl

  2. Whisk together until ingredients are well incorporated

  3. Add more or less water, to achieve your desired consistency

Spaghetti Squash with Ginger Turkey and Broccoli


Prepared ginger turkey
1 spaghetti squash
1 lb bunch of broccoli, separated into florets
2 tbsp olive oil
1 tbsp butter
Salt and pepper, to taste


  1. Preheat oven to 350°

  2. Cut the squash in half, lengthwise

  3. Scrape out the seeds and strands with a spoon and discard

  4. Brush the inside of both halves with olive oil

  5. Sprinkle with salt and pepper to taste

  6. Place the squash face down on a parchment paper-lined cookie sheet 

  7. Cook for approximately 45 minutes or until the outside is soft to the touch

  8. Once cooked, allow it to cool then shred the squash with a fork to remove the flesh

  9. While the squash is in the oven, in a medium sauce pan bring some water to boil and add the broccoli and a pinch of salt and pepper

  10. Cook the broccoli for about 10 minutes or until fork tender (do not overcook), drain and set aside

  11. In a medium skillet on medium high heat, melt the butter and add the spaghetti squash, broccoli and turkey

  12. Cook for a few minutes, just until everything is heated through

Ginger Turkey stuffed Portobello Mushrooms


Prepared ginger turkey
6 large Portobello mushrooms
1 cup mozzarella cheese, shredded
Spring salad mix, optional
Olive oil


  1. Preheat oven to 350°

  2. Clean the outside of the mushroom caps with a dry paper towel to remove any dirt

  3. Remove the stem and gills from the inside of the caps by scraping with a spoon

  4. Brush the inside and outside of the mushrooms with olive oil

  5. Place the mushroom open side up on a parchment paper-lined baking sheet

  6. Bake for 10 to 15 minutes and remove from oven

  7. Stuff each mushroom with a generous amount of ginger turkey and top with cheese

  8. Return to the oven and broil for 5 to 10 minutes, or until cheese melts and slightly browns

  9. Serve hot over a bed of spring salad mix
