Nuevo Latino Fusion Cuisine
To most, sabor means flavor, taste and savor, in terms of food. To others, like Ron, it also refers to doing things with soul, spirit or heart. At Sabor Restaurant & Bar, it starts with the service right down to the presentation and ultimately the food. Sabor represents the experience guests can expect every time they visit the restaurant. The mix of classic dishes and infusion of flavors include many influences from around the world like Japan, France, Italy, South America, Mexico, New Mexico and California. Some examples of the entrees featured at Sabor are the exotic Chicharron de Pollo with a delicate Chile de Rojo dipping sauce and Stuffed Calabacitas topped with Crema de Rojo. These mouth-watering foods as well as the house drinks are inspired by some of the top restaurateurs in New Mexico.
Ronaldo Antonio Quintana was born and raised here in Las Cruces. After graduating from Mayfield High School, Ron moved to San Francisco, California where he attended the prestigious California Culinary Academy. Ron graduated with an Associates Degree in Nutrition and a Bachelor in Occupational Science (culinary arts). While in San Francisco he was staged at several premiere restaurants before landing a Chef position at a small bistro called Crepes on Grand. Then, he took a position at Limon, a premiere Peruvian restaurant with cuisine very similar to that of New Mexico. Ron also had the opportunity to serve as the Sous Chef at the prominent Hyatt Regency in Lake Tahoe where he would have worked under Chef Allen Cubbler, but he always knew that he would one day come home, and all these experiences sparked his desire to create a Latin cuisine restaurant right here in Las Cruces instead. Well on his way, Ron’s aspirations are to one day be the top chef in the entire state of New Mexico.
One opportune day, Ron was introduced to Raj and Monika of the Ramada Palms. “They wanted me to take over the direction of the restaurant and they put me in charge of the menu development, décor and wait staff,” explained Ron. This new venture was nothing short of a dream come true for Ron. He would be able to incorporate his innovative menu into this new restaurant. It has been just over 2 years and since then the restaurant has undergone a complete transformation from the name down to the food and drinks. Ron’s unique flare integrates traditional dishes with a twist he calls Nuevo Latino Fusion Cuisine, which strays far from their previous menu. |
